Dark chocolate is prepared from the fruit of the cacao tree - Theobroma cacao. The fruit contains beans that are fermented and roasted to make chocolate. 

 

Dark chocolate contains 50 to 90% cocoa solids (the parts of the cocoa beans that remain after the cocoa butter is extracted) and milk chocolate has 10 to 50% cocoa solids, the rest of it being milk and sugar.
